The domain of Hautecour is located at Mont-sur-Rolle, which lies
between Geneva and Lausanne, in the canton of Vaud.
My family has owned the domain for 350 years. The area cultivated
is five and a half hectares, practically all Chasselas, with a little
pinot Noir. The soil is of a clay / chalky character, very suited
to the Chasselas grape. The domain produces about 60'000 litres
of Chasselas and 3'000 litres of Pinot Noir, per year.

The domain is worked by the method "low culture", called
"gobelet" or in permanent string-course, with a distance
of 90-110cm between the lines, which means that no machines can
be used for most of the work.
The domain is worked according to the rules of integrated production,
that is, respecting the environment, so that it gets the advantage
of the label Vinatura.

My cellar
The whole process of vinification takes place in the cellars of
the domain, and is carried out in centuries-old tuns, with a capacity
of 5'000 - 10'000 litres, or in casks, over three years old, of
225 litres. The wines undergo two types of fermentation : alcoholic
and malolactic.
Bottling is done on the domain.
